Coffee Processing

Green coffee can be processed in many ways. In the beginning the raw fruits or the red cherries of the coffee plants are converted into commodity green coffee. Then all the available green coffee is processed. For this there are different types of picking the coffee plants. It involves selectively picked process or strip picked process. The process of strip picking involves picking the entire stretch of coffee plants for processing with the help of a machine or can also be done manually. The selectively picked process involves picking coffee plants individually selecting and picking red cherries for harvesting. The later method is used only for the selection of rich quality of coffee arabica seeds done by expert and trained coffee workers.




Types of Coffee Processing

There are different methods involved in coffee processing. They are dry processing and wet processing. Dry processing is the oldest and the most natural way of coffee processing. The entire cherry after harvesting is cleaned and left to dry in natural sunlight by placing them on thin layers or tables. Dry processing of coffee involves two steps. In the first step the cherries are sorted out taking out the over ripe ones, damaged ones and one with dirt and cleaned them accordingly. The cleaning of cherries is done with the help of winnowing by hand using a sieve.

By affecting the cherries to direct sunlight they are dried. Some times they are dried using machine drying. Majority of coffee arabica and coffee robusta is produced using this method of coffee processing. The entire process takes place at least four weeks for completion.




In the wet process the layers of skin on coffee cherries are removed and then they are subjected to fermentation bath. The fermentation bath helps in removal of the pulp thus resulting in the cleaning of the coffee beans. Then the beans are dried in the sun following which a bit of finishing completes the process.
After the coffee processing is completed they are subjected to other processes like toasting and roasting finally resulting decaffeination. This gives the coffee the fresh mesmerizing aroma and delicious rich taste attracting everyone.
