Then the water mixture consisting of coffee flavor and caffeine is given ethyl acetate chemical treatment. The resultant mixture is heated in order to remove the chemical solvent. The water mixture is then mixed with the coffee beans so that the coffee beans can absorb as much flavor as possible. Only when 97% of caffeine content is removed from the coffee, then the coffee is considered decaffeinated.

The two popular methods of decaffeination of coffee are direct and indirect methods. When the additives present in the water mixture comes into direct contact with the coffee beans it amounts to direct decaffeination. Some times direct method also involves mixing of CO2 along with water mixture. In the indirect method of coffee decaffeination the ethyl acetate doesn’t come into direct contact with the coffee beans.
